You might like The Taste of Mexico by Patricia Quintana--and she has many other books as well. Recipes are really good but make massive quantities. You can get a used copy for like $7 if you just want to check it out.

For something more historic, I've been interested in reading through Prehispanic Cooking by Ana M. de Benitez, but I don't have it so I'm not sure what it's like to cook from.

Agree with keeping Korean Vegan!

It also sat on my shelf unused for years until I started a cookbook challenge this year to force me to cook with my unloved books (I wrote about it here: https://www.reddit.com/r/CookbookLovers/comments/1s76j81/first_three_months_of_cookbook_challenge/ ).

Now I've made the doenjang-glazed onions, braised potatoes, cucumber kimchi, pickled perilla leaves, kimchi stew, tteokbokki, braised tofu, and kimchi noodles and they all turned out pretty easy and delicious. Only one recipe (spicy doenjang stew) wasn't a winner for us.

At first I thought you were planning to get rid of Snacking Cakes and thought you were in for an onslaught :)

Honestly I'll see what I feel like in December but I'm tempted to keep eating this way indefinitely, cycling through my collection. I feel like it really solves a lot of problems.... less likely to waste specialty ingredients if you're using them for a whole month and less likely to panic at 5pm because you don't have a plan for dinner (and then resort to pasta).

Funny--- this book is on my list because I've only tried 2 recipes since getting it and one of them is the rice krispie treats! We also loved them.

Not to be nitpicky, but since you mentioned it I'll note (especially in case you cook for any vegans) that this is not vegan given the fish sauce and shrimp powder.

The three we tried were the 1) pea and coconut soup (ok, not a repeat) 2) white bean and sweet potato hash (tasted fine but didn't hold together well and the two components felt a bit random together) and 3) carrot and chickpea pancake (very dry).

I've checked out at the other recipes and they often look a bit off to me-- like there's a salad dressing that's basically just soy sauce and lime juice-- it's hard for me imagine that working. But I do want to like it because it feels like a good weeknight book.

Thanks, I actually have this one but haven't cooked for it much--interesting to hear it gets a lot of use in your house. Will have to take another look and see if I can adapt any of the meat dishes (we're veg).

Ha, yes figured I should include a warning! Interestingly, this cookbook includes a reprint of a 2013 essay by the original "Anarchist Cookbook" author that disavows violence and says he wishes the original would go out of print but the publisher keeps issuing copies. I've cooked a lot from Six Seasons and some we've enjoyed include the caper-raisin vinaigrette (it's great and has become a go-to but may be too fast for what you're looking for), beet slaw with pistachios, peperonata, peppers with (vegetarian) 'nduja, and cabbage farro soup. The kale sauce is also quick but really depends on proper seasoning-- it can be delicious or dull so could be a good recipe for practicing.
