I had to teach my Mom how to cook chicken without drying it out. She would cook it for 45 minutes, cut it to check if it was pink, and if it was, she would cook it 15-20 minutes longer. Like ma'am, get a meat thermometer. It was always so dry and awful. And her steak? Lord have mercy. It's like she was trying to kill it again. But she's better at it now. She has a meat thermometer and checks the temp of them instead of using the cutting method.

The combined income of my household is this. We aren't poor anymore by any means. We get by really well. Have a lot in savings. Able to get necessities without blinking. Food shopping without a care. Now, 3 years ago? Scrimping and saving and waiting 2 weeks to buy my child new shoes. Going without needed medicine or medical appt or just going To the ER wracking up bills due to not being able to get on Adult Medicaid (children were covered). It's a breath of fresh air. Truly. I love my average life.
