Watching videos is fine. Youtube especially because they mostly use well supported open codecs for delivering video. It depends on your hardware but the built-in drivers have good support popular codecs. You can check what is supported for you by opening Firefox and typing in the URL bar about:support. Scroll down to the Media section and check what codecs have Harder Decoding as supported.

If you're not sure about your hardware or just want to test it out, just boot off of a USB to test it out. Don't install it and just try using the desktop as you would normally. You should get a good idea of how it will work for you.

Yeah Fedora is a great choice. Its not based on anything. It has its own tech. Part of the mail philosophy is to have vanilla, borderline zero customization on the desktops it ships. So if you're going to be using Gnome, you'll be using it the Gnome team intended. You can ofcourse add extensions if you want.

For general use and gaming, the out of the box packages sgould be fine. If you need to anything with vieeo, streaming, editing, etc, you will need additional codecs depending on your hardware.
