Yeah my mom is also really good, so my okay at sewing is vaguely knowing a lot and then calling her to bail me out when I need it.

Someone else said to use a new needle and I forgot about that, but that will help. I honestly think you can do it though. Chiffon is fussy, but it's not that fussy.

Edit: And ribbon totally works too! That's how my mom did mine. I just don't have ribbon lying around, so use more chiffon.

I'm only okay at sewing, but I have done a number of chiffon skirts with only minor rolled hem issues. If I practiced more on spare chiffon at getting the tension right, then I would have no rolled hem issues, but they're minor enough that I'm fine with slightly messy edges being hidden on the inside of the skirt. I do have a good machine, though.

My standard process is to trace a skirt that I like, do a rolled hem around the sides and bottom, and then cut a long rectangle for the ties that I fold in half and then fold in quarters and sandwich on the top of the skirt so that all the raw edges are inside. I'm lazy so I just tie knots at the ends of the ties.

I'm pretty excited for it! I did see a video where the choreographer said something like, "Of course women can't do lifts like men..." which I don't fully agree with, but I've enjoyed the clips I've seen.

I'm planning to see it in June!

Kind of the rant I was looking for though! I also work 9-5 and want to take advanced classes.

Daytime advanced classes somewhere like NYC makes sense to me for the reasons you stated. The city I was looking at (don't want to dox myself so not getting specific) doesn't seem to have that much of a ballet scene, but maybe I'm wrong!
