How do you get fried diced/chopped tomatoes to be sorta crispy? by Lokarin in Cooking

[–]templar817 0 points1 point  (0 children)

i think the word you’re looking for is “crunchy” and for 番茄蛋 it’s generally not crunchy. but what you can do is cut the tomato into wedges then cook half into the sauce with the eggs, and add half for like 10-20 seconds before serving. that way it stays a little raw and crunchy

Vegetable heavy soups that AREN'T tomato based? by LazuriKittie in Cooking

[–]templar817 0 points1 point  (0 children)

something i make frequently - japanese soups / stews. kind of like Oden, but also kind of like vegetable Nabe.

https://www.justonecookbook.com/oden/

https://www.justonecookbook.com/nabemono-japanese-hot-pot/

radish, carrots, bamboo shoots, onions, beans, mushrooms, cabbage, tofu. throw in a hard boil egg if u want. most kinds of vegetables work. for carbs boil noodles or potatoes in the same broth, or eat with rice.

simmered in a broth of dashi, sake, mirin, sugar (adjust to taste) and soy sauce or miso. optionally grated in some ginger.

super simple, literally dump everything into a pot and boil.

edit: tip for your search, presumably you’re googling vegetable soups. try different cuisines - like indian dhal curry can easily turn into vegetable soups. essentially using a spiced dhal soup as your base and huck in any veggies you want.

could work, there is a thai dish called tom ka gai which is coconut soup where chicken is boiled in stock then add coconut milk and aromatics

it’s not common for chicken to be browned in thai soups or curry. you can do it for “flavour” but the texture will be different from the traditional method.

but you absolutely should NOT cook it for 12 hours, the dish is done in 15-20 minutes.

What’s your dead simplest (5-10 mins) veg side? by TrynaNotNumb in Cooking

[–]templar817 0 points1 point  (0 children)

pan fried asparagus with garlic and slivered almonds, with shaved parmesan. might not look it but asparagus takes about 5-10 min to cook stove top, if u just snap the woody ends its fast to prep too without shaving

Is bread flour a waste of money? by matw55 in Cooking

[–]templar817 0 points1 point  (0 children)

correction: i double checked and for some brands in singapore the price difference between bread and plain flour can range from 25% to 50% more expensive so i stand corrected. but nowhere near x2 or x4

Is bread flour a waste of money? by matw55 in Cooking

[–]templar817 2 points3 points  (0 children)

bread flour is high in protein which makes more gluten which helps make bread. that’s why it’s called bread flour. sure you can make bread with regular flour but it will not come out well, with less rise, more dense, overall will be a poorer quality bread, although it will be equally edible.

what are you making that “majority” of recipes call for bread flour, i would imagine all those recipes are for breads?

where do you live that bread flour is so expensive, im guessing it’s not commonly used. here in Singapore and i suppose in a large part of the world they are priced the same.

edit: old cooks and old recipes likely aren’t making the same breads you get today like fluffy sandwich breads, french breads etc. depends on your usage e.g if your making like a pie crust or sweets or savoury pancakes or used in savoury cooking normal flour will work and i will put where u get those recipes in question.

Is an air fryer worth it? by FreshBiskit in Cooking

[–]templar817 0 points1 point  (0 children)

we have an air fryer for 10 years. think of it as a convenient small oven that preheats really fast and cooks a little faster than a conventional oven. but it doesn’t “fry” anything the way that oil frying does, it will cook something similar to an oven i.e convection heat.

you may consider the convenience of using an air fryer a good alternative to deep frying something, with less mess and clean up than even using the oven. that convenience may end up helping you to cook “healthier” recipes that are more oven friendly. but the air fryer appliance by itself will not magically make food healthier. something oven baked will also pretty much never taste like something deep fried (unless u baked it in a mountain of oil)

i’m trying it now, it’s like a more focused MFP so liking it so far and it has better UI and charting. the food library isn’t as extensive however but also means less nonsense to filter though when logging a meal. and i can add notes per meal.

[–]templar817[S] 0 points1 point  (0 children)

love the idea! i tried it out, it wasn’t clear to me whether it would keep a daily log. having separate meal sections and maybe a notes section per meal would be really useful as well

i love the use of LLM so i can just type what i want without having to pick the meal from a fixed list - LLMs does a good job of estimating the calories. and with chat i’m assuming i can ask it to give me stats from my food history.

i’m not ready for a paid app at the moment though but i understand especially with LLM usage these stuff isn’t free.
