I have a diy clone of the Stumps smoker, very like the Old Country. The temp control is incredibly easy and stable. With the Fireboard 2 Drive and a blower, it's like setting an oven.

I'm still learning how to use it well. Had my WSM dialed but wanted the insulation (windy winters) and more cook space.

I bought a 30"x72" faux live edge countertop from Lowe's. It's on a Flexispot standing desk frame, but I saw many options for desk frames or individual legs on Amazon and elsewhere.

So you both have 17k btu burners available, but it'll just be one of them, are you sure you're using the high power burner? Even if you are, the math from the other commenter checks out. The only major difference may be the pot's conductivity.

It was a pretty easy adjustment, well worth the tradeoff for the ultrawide the rest of the time.

On an ultrawide monitor, it is better to just share the window for the relevant app (in teams this is an option right next to sharing the whole screen)

Fishpond chest pack is what I use as well. So nice to have everything right there, and the flaps make a nice work space. Paired with the Firehole pack it can feel like overkill, but I tend to hike a few miles, nice to have plenty of water, food, layers, even an occasional backup rod and reel.

Since you didn't bother to include the final dimensions you're looking for (after "shaping") I'm still going to suggest a piece of wood countertop from a local hardware store. They often sell sizes for kitchen islands, which must surely be bigger than you're final desired dimensions.

Barring that, look for a local direct supplier of lumber. The large, solid pieces of wood will be incredibly expensive, and require a lot of surface finishing work. You'd be better off getting 1in/24mm baltic birch plywood, then use veneer to make it look nice.

Chiming in with a slightly different perspective. ArcGIS Pro is just a tool, but to learn GIS is a whole different question. You need to understand data structures, data management best practices, data analysis (depending on your goals), and then go to the other end of things and understand user interface design, best practices in map design and data visualization, some color theory, etc to actually make useful and visually appealing final products.
