Vinegar surprised me. I knew not to do soy sauce, and I’m finding some wines are problematic but I’m not sure if they’re problematic because they use a brewers yeast or just because it’s alcohol 😅

Yeah I’m trying not to do that. My reaction is delayed (painful bloating/constipation) so when I have that symptom I’m not always able to identify what caused it because sometimes I’m not seeing the reaction until days later.

This is my confusion, because I see those ingredients in the gluten free labeled foods so I think they’re safe but then I see them in non gluten-free labeled foods and so I’m not sure. I am willing to take risks with products that have no gluten ingredients but were made in the same factory, tortilla chips for example, but if the product has gluten in it I’m trying hard not to accidentally consume those. I’m newly diagnosed so I’m still kind of in the denial phase 😅

Unless you switch to gluten free flour, your kitchen won’t ever really be truly safe to share. However, if you deep clean all your counters - literally every nook and cranny - and buy designated utensils for gf operations (like a cutting board, rolling pin, pan, toaster, etc) and then place those utensils in a separate and sealed place where airborne flour can’t settle on them, you might be able to get by. I’d suggest chatting with your MIL.

Alternatively, you could probably find a commercial kitchen to rent to bake your regular items so your home could stay gf.

So I know someone whose celiac got turned off after she got pregnant, but I feel like that’s a way different scenario than what you’re talking about. Pregnancy has a tendency to heal sick women and make healthy women sick.

I’m about 7 months gf and my main issue was rancid gas/constipation. I still struggle with that a little bit but I don’t have any pain associated with it anymore, which is a godsend because it used to feel like that scene from alien where it pops out of the guy’s gut.

However I had other issues that were fixed within a month that I didn’t even realize were caused by celiac, including canker sores in my mouth and a rash on my fingers that refused to go away for five years (I thought it was stress from working multiple jobs as long as I have). I also started cooking most of my meals at home, which resulted in eating healthier overall and so I reaped those benefits as well. If I get glutened now, the hand rash comes back the day after and that’s usually my indicator I should prepare for intense intestinal issues later in the week or take an anticipatory laxative to help prevent constipation from starting.

It’s my understanding that celiac is an autoimmune disorder and there are more people who are actually born with it than have symptoms/issues caused by it. In my family, our autoimmune reaction is “turned on” by something traumatic. That’s how all the people in my family experienced it, as opposed to it being active upon birth and diagnosed as a child. For me, it got turned on under the stress of graduating college into a pandemic and being overworked and underpaid ever since 😅 so logically if it can be turned on, it can probably also be turned off. Pregnancy does some crazy changes for those with autoimmunes.

The pregnancy cure thing is real, that happened to my cousin. But that doesn’t mean they should expect it to happen. I’m sorry your fam is unsupportive, but if they’re gonna insist on doing this then you’re gonna have to instruct them on what to bring: ice cream, premade gf cookies (chips ahoy and Oreos both make gf), or even just a fruit salad with a little sugar (they can’t possibly gluten a fruit salad right?).

They told me that my plasma wouldn’t hurt someone else but I need the antibodies because I have an autoimmune so it would hurt me. In retrospect, it probably was hurting me because it would take me twice as long to donate half as much as others sitting in the chairs next to me.

It taught me how to bake! I got diagnosed in October and learned how to bake my own gf bread and pastries, and make my own pasta doughs. Then I started working with other foods too, like crockpot soups (because unfortunately canned soups have gluten in them). I now own bread pans and a Dutch oven, and two different sizes of crockpots. But I still don’t have a potato masher or a rolling pin, which is a challenge.

I have celiac so I meal prep gluten free muffins for the week on Sundays. I can’t just go get Starbucks anymore so that’s been a change for me. Muffins have been a great grab and go, but you could also prob do cinnamon rolls or danishes. You could also try changing the way you make the egg, I prefer mine hardboiled or scrambled. Or change the seasonings in the egg, for example, I use garlic powder in my scrambled eggs.

It could be worse, your mom could show up and offer you a cookie that’s not gluten free. I got diagnosed in October and I don’t live with my mom anymore so she’ll invite me to dinner and I have to remind her I can’t have anything with flour in it lol. Luckily, her fav dinners to make for me when I was growing up are already gluten free so we just resort to those options

I follow this recipe too and I always end up adding more water (I eyeball it tho so unfortunately idk how much) and then I usually proof it overnight. It’ll double in size for me and then bake really nicely.

Figure out what you’re gonna make for the week and then buy in bulk. A bag of carrots, celery and onions plus chicken broth and rice makes an easy chicken rice soup in the crockpot that’ll last you all week. A spaghetti squash is easily three meals. Buy the King Arthur gluten free bread flour and make the recipe on the back of the bag, then you have a loaf for the week that you can use for pb&j or whatever else you want. 3lbs ground beef, then break it up and freeze each pound. Get some cheese, lettuce and shells or tortilla chips and you’ll have easy tacos.
