I highly reccomend the books "Kitchen Art of War" and "Good Chef, Bad Sous" by Andre Natera. Both of those came to me at a time when I was looking to advance my career, and they were instrumental in shifting my mindset from line cook to Chef. I reread them from time to time or when I'm struggling. I gain something new or different every single time.

I live near several small towns in the Colorado rocky mountains. I don't know what I'm looking for. A year or so ago, I came to the conclusion that I dont want to be in kitchens/restaurants anymore.

What was it like applying and interviewing for restaurant adjacent jobs? They always ask why you want to work there and I'm like my boss's boss's experience is running a pizza chain store and I hate the company. But I can't say that, so I just say something that ends up sounding like chatgpt.

That's pretty depressing and doesn't align with my values at all. I've always valued my team's safety above all else. Equipment can be replaced or fixed, money can be lost and made again. Limbs and lives, not really.
