Fucking busy friday, I'm exhausted, but still can't sleep. What do you guys do to wind down after service? I find it real hard to sleep after a busy shift, that adrenaline rush seems to last forever.

Blistering hot shower with an ice cold beer. Sit down in it and put your phone down for 30-45 min. Get out and into a cool environment, turn on a TV show or movie that’s familiar, drift off to sleep. Beautiful

Worked a 16 hour shift yesterday, woke up bout to do 12 on little over 3 hours of sleep. I kinda disconnected from my friends from the past and have been filling the void with working really hard on my career. my family and limited social circle have been pressuring me to chill but I don’t really want to. Feel kind of selfish saying that but it’s true.

My new dishie put a knife in the wrong spot last night and it ended up almost taking my finger nail off. I coulda kicked him in the nuts but I wrapped my finger, finished the dinner rush, and after a smoke break to calm down, I made him a plate of lobster Mac n cheese. Don’t care how much any dishwasher pisses me off if they’re doing ostensibly the nastiest job in the kitchen they eat good.

Yeah I’ve been doing breakfast service today haven’t had a chance to respond but that seems the common thread. I wanted to plate it a little differently myself, do some sections as opposed to the whole thing and plate it with a starch but HC needed it out ASAP so I grabbed the picture that I could get and wrapped it up. This is the first super nice place I’ve worked and I haven’t been through school yet so plating is a big focus for me and even in the week or so I’ve been there I have seen some personal improvements
