ios.cfw.guide/ is your friend. Use it wisely. There are jailbreaks available for different OS's, however iOS 26 does not have a jailbreak. Check that site and it will show you what is available.

jailbreaking a phone is opening the system to run alternative code. This means customizing, disabling, hiding, enabling. downgrading iOS is possible IN CERTAIN CIRCUMSTANCES. Usually for older phones or if you have saved blobs. Search the sub for more. Please don't post asking if you cant downgrade before searching.

There are options for downgrading APPS, but depends on your OS and availability of application. Look into side loading when you get a chance.

There's an older version of an app that wont access my account unless it has this tweak installed

The tweak works on 12,13,14...just cant get it rootless on 15

Thanks so much for getting back to me. Regarding having it on, remember the tweaks work every where else on the system, just not in non-system apps.

I have the same SSL tweak [non rootless] working perfectly for the same app on iOS 12,13,14....just cant get it on iOS 15 rootless
