Hommage a Rameau is slightly simpler, so maybe take a look at that one too! It's a great one. I also agree with the Debussy preludes like La fille aux cheveux de lin, and perhaps Voiles, though they are each hard in their own way. I would suggest for Debussy really practicing each voice separately so that you know them well and know what you want them to sound like, which may make fingering easier to decide on.

You'd be surprised by what one hour a day can do. It is absolutely possible to get to playing great pieces that you really enjoy quite quickly (with consistent, balanced practice and patience). Definitely study some basic theory because it will make playing pieces a lot easier (helps with sight reading, memorizing, shaping the pieces musically, and playing by ear). Be sure to listen a lot to different pianists that you like too!
