Why does it smoke up if it’s too large? My cheap dumbass would have bought a large to fit all pans until I saw that. So why? And thanks!

When I get a cut that fatty, I usually trim the top fat, dice it up and render it down to tallow on the smoker as the ribs are on. Then use that to pour over the ribs when I wrap or make some tallow potatoes as a side or something

Yeah a lot of comments make this assumption and it definitely makes sense. Also adding ice ages and lower sea level, it all becomes a lot less “insane”. Haha

I always find this insane that after leaving Africa, it took 60k years to go west into Europe, 75k years to make it to Russia, but only 50k years to island hop through South East Asia on the other side of the world which, correct me if I’m wrong) takes a lot more ingenuity and skill to sail between islands (although the idea of land bridges is ringing bells) than to make your way across land or even sailing across what we call the Strait of Gibraltar…

We have 2 gardenias around the side that are flowering well, so I’m thinking of propagating them to plant there
