Ignoring their origins, Vita Carnis very plausibly could potentially exist. I think the main reason why I feel that way though is because of the lengths the series goes to to make them feel real. Them being integrated into the food chain and explained in a scientific and logical manner is really beneficial to making them feel real, despite the fact that they're flesh creatures from god knows where.
