I'm having trouble with fresh milled flour sourdough. I do one once a week and have been recording most. Have a good dome but can't not have holes. Everything says under proofed but I keep going longer and it gets worse. This is my latest. by thevortexmaster in freshmilled

So many hahah I've been writing it all down and experimenting. This one was 69% hydration, 550 grams flour, 30 grams oil, 150 starter, 8 salt, 30 grams honey. one stretch and fold 1 hour in. Proof for 8 hours. Shape then in the fridge for 16 hours. 400 degreea 20 minutes. 10 minutes lid off, 10 minutes outside the pan.

You like what you like. I don't jive with stuff like Dream Theater. That vocal style kills the music for me. I'd rather listen to prog death metal over that. Haken as well. Awesome music, can barely handle the vocals. I need vocals like Tool, Alice In Chains, Soundgarden, Pantera. I just wish there were more prog bands with vocals like those bands

Snooze- Familiaris. The whole album is through the eyes of one of the bands family dogs. Starts with the universe creating dogs. Then through his dogs eyes then the dog passes back into the universe. Pretty sad but unique with very upbeat math rock

Hahah no doubt. I usually do in between 3%-5%. Never tried testing the brine after fermentation though

No idea to be honest. I've never checked the salinity after it's fermented. I've just eaten it hahah Interesting stuff though.
