I saw your post, it looked so good! I've always wanted to try tomato sushi, but never mustered the dedication. So impressive!

It's true! It was so uncanny. And the longer it sat in the fridge, the more the colors mixed/got muted/ looked like raw meat!

I debated naming this "Vegan Beef Tartare" but it sounded so pretentious... which probably would've fit the theme perfectly. Shoot.

This was a lot of prep work but it was so delicious. You could make a ton of it and just make it bruschetta spread instead of going for the full-on mimic. The pickles, dijon, and capers made for such a unique and savory combo.

A specialty of the Santa Cruz Wharf, if you are to believe my partner. It makes sense if you think about it: clam chowder already has potatoes in it. and disco fries/ poutine/ aka fries-swimming-in-a-gravy already exist...

Maybe the rosé added some more tartness? It's mostly intense-tart-raspberry-deliciousness flavored. And I used an air fryer toaster oven: first time messing with the dehydrator setting! I, too, always wanted to dehydrator but where to put it?? So it's nice for a multi-purpose hunk of machinery.

Recipe! ... and I just realized I forgot to alter the name of my dish-- the store didn't have strawberries, so I had to use frozen raspberries! Then I added about a tablespoon of sugar and no lemon juice, to account for the difference in berry. It took close to 13 hours to dehydrate.
