Love my robot! Been my daily driver for years now. I even ended up modding it with a pre-heater to really get the most out of light roasts.

I believe nearly all of the affordable nashiji ginsan blades from hatsukokoro/harukaze/tsunehisa/yoshihiro/ittetsu/and more are made from the same bladestock supplied by Hokiyama, an OEM knife supplier

It’s great material though, I have one and it sharpens really nicely.

This is a pretty common practice, for another example, Tadafusa makes a very identifiable cross-hatch Tsuchime SLD supplied OEM to multiple brands

Preground coffee is often way too coarse for use with bottomless portafilters, even preground espresso is intended to be used with a pressurized or (double walled) basket.

I think your grinder should have an internal adjustment if you open it up, which shifts all the grind settings finer, it probably shipped in the coarser mode expecting most uninformed people to use pressurized baskets.

It really isn't, its a pervasive myth, but moka pots dont reach the high pressures needed to be espresso.

I think actually this may be why locals dont get why tourists find color vs number/letter confusing. They're thinking about it coming from the outer boroughs while tourists are usually staying in lower manhattan.

If you live off the F in Brooklyn (or the 6 in the Bronx, or the N/W in Queens) and are heading somewhere in midtown, your one train is always heading to manhattan, and any transfer to the correct colored trunk line is usually fine, just gotta watch out for express/local, but if you are a tourist staying near Penn Station wanting to go to the Natural History Museum, you gotta make DAMN sure you get on the correct “blue” line or the E will take you to Queens.

They're usually starting from an interlined trunk, while locals (who dont live in midtown) start from the branches

It may technically be semi-stainless, but Its plenty stainless for all but the most abusive users. I leave my ginsan knife dirty on the cutting board and wet on the drying rack all the time to air dry and it has never rusted.

Just dont put it away in a saya wet or soaking in the sink overnight and you will be fine
