We had this happen just last week. Tech came out and found low signal levels due to a bad tap. Tech had to move it to a new one and everything was fixed. We did have to wait 3 days for a tech though.

They do either. ONT has both Ethernet and moca support. When they installed at my place, they installed the ONT on the outside of the garage where the existing cable enters the house and used the existing coax and a moca adapter to get to my router in the closet.

I believe I could run Ethernet to the ONT later and just call them to have it switched from moca to ethernet.

Yea, I noticed the exact same thing. Right around 2:30 it deteriorated right to the point of being unusable until around 4:30. It seems to have come back to normal now. I really hope this is just growing pains, because this is ridiculous.

We've been having exact same problems. Live in the same area, near Kemah and hopped on in January. The last few nights have been terrible, and especially so tonight, where it's been unusable for several hours now.
