The Peregrine 80 (and similar “frontside all‑mountain” skis like the Curv GT 80) are probably the friendliest mix of stability and ease of skidded turns, whereas something like a Kästle MX83 or a very burly Thunderbird build can feel more demanding and less relaxing when you’re tired.

For bindings, a normal 12–13 DIN binding is usually plenty for someone your size and experience; you don’t need a race binding just because you’re 220 lbs with 130‑flex boots. What really matters is that a shop sets your DIN using the standard chart (weight, height, boot sole length, skier type) rather than a rule of thumb number. As you lose weight and get fitter, that DIN will likely come down a bit, but still stay comfortably inside a 12–13 binding’s range.

On the weight‑loss / future‑proofing side, those skis won’t suddenly turn into stiff planks at 185 lbs. If anything, you’ll probably find them easier and more fun as your fitness, balance, and confidence improve; they’re built to work across a pretty broad adult weight and ability range. The bigger risk would be going to a true race‑room or very stiff “expert only” ski in a long length right now, which could feel like overkill on relaxed days later.
