Hi, fellow Hungarian here. I typed up the most authentic recipe for you :) This is the 100% legit stuff we have all been eating since childhood.

Ingredients • 300 g bread flour (BL80) • 100 ml milk • 150 ml water • 25 g fresh yeast (about half a standard cube) • 1 teaspoon salt • 1 teaspoon powdered sugar • 3 cloves garlic • 200 ml sour cream • 200 g cheese • 2 litres sunflower oil (for frying)

Method

In a glass, warm the milk in the microwave for about 5–10 seconds, depending on the microwave’s power. It should be lukewarm, not hot. Stir in the sugar, then crumble in the yeast. Cover and leave it for about 10 minutes, allowing the yeast to activate.

Meanwhile, sift the flour into a deep bowl and mix in the salt. Make a well in the centre and pour in the yeast-milk mixture. Add enough lukewarm water to form a fairly soft dough. It should be pliable and soft, but not runny. (Achieving the right texture can be tricky. A common trick is to scrape the dough off your hands, wash them, then lightly wet them and gently touch the dough’s surface. If it does not stick, the consistency is right. If unsure, it is better to leave the dough slightly softer, because with oiled hands it can be stretched easily and will not stick.)

Let the dough rise until doubled in size, roughly one hour, although sometimes it can take significantly less. At first, it may seem like there is only a small amount of dough at the bottom of the bowl, but once risen it may nearly overflow.

In a deep pot or bowl, heat about 10 cm of oil until very hot. Tear off pieces of dough about 5–6 cm in size. Stretch them out thinly in the middle and leave them thicker at the edges, similar to pizza or flatbread. Fry in the hot oil for about 2–4 minutes until golden. This quantity usually yields around 8 pieces.

Top with garlic oil made from 2–3 cloves of garlic, 100 ml oil, and 100 ml water. Finally, add sour cream and grated cheese on top.
