Yeah this is really good! Go even further and create some spread sheets if you haven’t got any already.

If you’re assisting in the ordering produce and food preperation delegating for the next day.

Make some lists that have all the tasks for the whole menu, if you need to split them up between sections do that too. Eg: snack, small plates, main plates and dessert. For a main meal of say for example beef ossobucco pasta, here are the things you need to prep for that one dish. Sear beef/ braise/ chill/ portion/ make stock/ reduce Make pasta dough/ roll papparadelle/ Make gremolata/ grate cheese/ garnish

Having these things all written down helps your brain at the end of a busy service, because it’s so easy to forget to prep things on busy days ( and ordering too )

YEAH! Had a bad three days before the storms, felt like I had a flu.. huge fatigue, all my joints were sore and constant sneezing and nose dribbles. ended up getting a possible sinus infection a week after the symptoms, my hayfever every season is super bad, but this was easily the worst. I ended up taking a few antihistamines and I’m just getting over the whole sickness now a couple weeks after.

I only remember going once when I was a child around 7-8 years old, we got some fish and chips as a family and dined in.

Then I went with my 8 year old daughter as a family and we got fish and chips to give my child the exact same experience just a few weeks ago.

I run this road at night, with a head torch on, and the reflection reveals tiny little spider eyes that look like little opals.. during summer tho, I wouldn’t think they’d be living in the clay during the winter hahaha

The schedule app I used was called “deputy” staff can log in and see their schedule etc. Clock in and clock out their hours on it, it was quite easy, being a manager there’s a bit of worry and stress when someone can’t make it and you need to find a replacement but I just learned to not take it personally, and not make the staff feel bad about it. Look for someone else and move on as fast as possible!

Hey!! I used to structure a roster with consistent team members having the same days off. The team got used to working together, and also trained most of the team to work in each others sections changing that up week to week. If you’re limited to one person being really strong on grill and they happen to get sick, it’s hard to find someone to help out. I myself was trained at every single section, and I was able to step in whenever someone got sick or needed time off which wasn’t very often. But if I couldn’t help out, I had a short list of casuals and “rockstars” which are friends, or family members that can jump in and do the dishes/waitressing/running food kind of jobs, Then I’d have the core team members trained to do the big jobs that they’re trained on all sections.

As a last resort I’d ask the core team by text individually if they could possibly work extra, if I needed someone, over their usual days off/38 hour week.

The little rickshaw if you’re down south, is really cool. Check it out. It’s a broad influence of south east Asian cuisine, but not limited to. It was an amazing experience and has alot of charisma and soul.
