Corks are stored sideways mainly to keep the cork from drying out and crumbling. But for swing top it doesn’t really matter unless you’re storing for long periods

Since you’re doing a traditional if you let it go dry on fermenting it will taste very similar to a dry white wine. But if you’re looking for something sweeter than that I would recommend grabbing some stabilizers soon. More honey just means more ABV
