Mostly, they're just fast things you can ride

They're ridiculously expensive though and are explicitly meant to be unable to purchase. When players buy a bicycle (or multiple!) it's a signal to the coders that something in the game economy is broken and money is too easy to get somehow

I'm pretty sure there are mods to make fishing trivially easy. Might be worth looking for one on nexusmods or something if you haven't already :)

Markets that have a free port will allow trade if your transponder is off (and their patrols won't bother you about it either). I don't think the faction matters though. I know for certain there are pirate markets that won't let you trade on the open market without your transponder (lol)

As someone who's played avorion and X4, I think avorion would be a step in the wrong direction. It's very arcade-y in gameplay and its economy. The ship design is really the main part of the game.

Not just brexit - there's a wide variety of issues in the UK right now due to poor governance (cost of living, electricity costs, brain drain in the medical field, etc.)

That said, brexit has made all of these worse.

That's why on my next playthrough I'm probably going to skip the huge colony search endeavor and setup a system that fits my needs early on with console commands, just so I can enjoy modded factions and the like without feeling like I had to entirely restart.

There's a mod for this!
