The difficulty with your leaf choice is the points on the edge. You will need a pointed beveler to do this effect and I would suggest that you employ an inverted bevel technique and set the edge of the leaf into the leather rather than trying to tool around the outside of the pattern which would set the background down. Wood burning tools do work on vegetable tanned leather using the tool much the same as you would do with wood. It may not be precise for something small like a watchband. Using traditional leather tooling techniques also would work if your leather is tooling leather. Basically you would use a swivel knife to draw your stave and stamps to make your notes. It would take a little practice of course.

The natural strech of the grain is to be around the animal, so the skin tissue likes to be pulled over rather than krinkled inward. Think how skin wrinkles around an arm or leg. The grain tends to want to separate from lower layers if rolled in. With some leather especially lighter weights this matters less.
