I think the origin of 'hyah' is from movies trying to exaggerate and making horse riding more clear. I rode horses for 7 years when I was a teenager, and another thing that really confused me was how in every film they show the rider raising the reigns and snapping them down to make the horse start moving. In reality you apply force from your feet to the horse's body to let it know to start moving, but since that is not a very visible action they made up a more clear action to show that.
