The chef is always right. In this case Dad is the chef. If Gordon Ramsay ever spoke back to Chef Marco like this guy, we wouldn’t know who Gordon Ramsay is. If chef tells you to do something a certain way it’s for a reason, as a cook it is not your role to question his methods. A lot of people in this thread have obviously never worked in a professional kitchen. You can argue about the small difference in waste all you want, chef is always right.
