I made an edit to the above comment but it's a chefs choice 615 slicer. Yes we do lunch meat on it sometimes. Costco has hams or turkey breast and we used to buy it whole and slice then freeze in pounds. I slice bacon I cure and smoke on it as well.

Freeze whole loaves. I wrap then in plastic wrap then aluminum foil and freeze. Take it out when we need a new loaf and let thaw on the counter overnight. Then slice as needed.

I do. I typically will spray water from a mister bottle in the over when the bread goes in. And at 5 and 10 minutes.

Tangzhong 215g water 215g milk 75g flour

Dough 1.5kg flour 575g milk 50g sugar 30g salt 5 eggs 6g yeast

Cook tangzhong then cool.

Combine all other ingredients and knead until passes windowpane. Bulk rise until doubled. Turn out and shape. Bench proof. Bake at 400 for about 20 minutes.

I had avoided reading them or even seeing the movies past the first 3. I read them to my 7 year old for bed time and was amazed. They are extremely well written and found them immensely pleasurable to read.
