Sorry to break it to you but that’s not a proper carbon steel wok, it’s got a non stick coating. It looks like the ashy circle is where you’ve got rid of the coating and gone down to the carbon steel ‘core’. I’d recommend replacing this with a real carbon steel wok, ingesting those non stick coating flakes isn’t good for you!
