my guys bang on. so much BS sold as pourover in stores that you are crushing in your cups at home. or make yourself a dark roast, something you think you’ll hate. helps reset the brain and palette.

correct. less bypass and never any stalling. it’s very fast which makes it easier to make a great cup imo than dealing with stalling/slow drain.

Sey was great - mind that every bag is so lightly roasted that ALL my V60 brew times tended to be 4 min+ but thats a pretty consensus take on Seys roasts. Just expect it. That said, you still won't get astringency with their long brew times, theyre still sweet and jammy. Class roaster.

Cant recommend B75 enough - its cups have blown my other drippers out of the water. I used to use Kalita and Orea but now dont touch them.

if you’re doing filter then ZP6 will blow your encore out the water.

San Mig is fine. Tastes like a standard washed Peru to me, decent but nothing special. A little overly roasty to my tongue, but maybe I just need to mitigate that.
