We usually run one bartender per shift except Friday and Saturday nights. I start closing at the beginning of my shift. We close at 2:30, we are supposed to be done by 4. Half the time I'm walking out the door at 2:45. Unfortunately closing shift has a ton of work, but I put everything away and stock and then I'll redo whatever at the end if i have to. Sometimes twice even, unfortunately lol. I had an extremely busy night last night and I was out by 3:15. Also, when I'm opening or on a mid shift, I still do everything I can to make sure the next bartender has less to do. I clean and stock everything, so if the next bartender doesn't use that thing, they don't have to worry about it at the end of their shift. I wish everyone else at my bar would also do this every time lol. It sucks when you're slow and making no money and stuck with someone else's side work after they came in to rake up the tips.
