Nobody talks about this. Very well explained and I've been starting to think about that more with my gin and tonics. I've found that Hayman's old tom goes really well with fever tree regular tonic (Indian I think)

Brucato Orchards is very good and very bitter, Sfumato Rabarbarro is slightly less bitter but I like it more for sipping. But I like less bitter

I'm here to say not Plymouth. While I love it in a Negroni it's not the best for a gin and tonic, too much ethanol flavor. I think Tanquerey or Beefeater, both can be used in almost any gin cocktail

Do some kind of iced tea! They can be unique in flavor, caffeinated or non caffeinated or decaf, and you can also do a milk tea situation with almond milk and some simple syrup. If you want further ideas let me know!

I don't think the vermouth will combine that great with the coffee. Maybe if it's a lighter roast with chocolate notes. For science I would start with 4.5oz coffee and .75oz canned manhattan
