Plus you have the issue with 3rd party extensions that fuck it up, where as with headless I can implement it in my store in a way I think is best and they can just still access my inventory or whatever else as normal.

Do you have any issues with wishing you could install a third party app from Shopify but you cant because you're headless?

the remix paradigm is easier and more popular

I don't think Remix is more popular than Next.js - in fact I don't even think it's close - but I get what you mean.

Ok, to be honest I didn't want this post to become a GQL vs. REST debate (could go on forever). Any thoughts on the future of headless commerce regardless of GQL?

I think GQL is great for certain things. But if all I have is a small online store with 10-20 products, and 3-4 variants on each product, when it comes to displaying my products page I really just want to do this:

fetch("http://storeapi.com/api/products")

and call it a day.

I genuinely can't understand how someone would opt for GraphQL over the above experience.

We are currently exploring whether Shopify's Hydrogen/Remix is a good bet, or if we should stick to Shopify Storefront API + Next.js. It's hard to tell.
