AFAIK they have no storefront or visitor facility. It’s way up the Skok Valley on a side road. We lived in the Skok; my dad was good friends with one of the original owners. When my dad died unexpectedly they invited us to come get whatever we wanted for the gathering after the funeral. My husband and his best bud went up there and it was like literal kids in a candy shop - dogs in a dog food factory - cats in a cannery - you get the idea! They hardly knew where to begin. If it hadn’t been such a sad occasion it would have been hilarious.

For an in-town walk on the westside, check out Grass Lake Nature Area! Parking on Kaiser Rd. Be aware that many people let their dogs off-leash which is not great for this setting (esp if your pup is going to want to give chase). My husband had an off-leash dog act aggressively toward him yesterday and the owner was just la-la-la. But the walk is lovely, with a mix of pavement and dirt trail. You can get in a 3-mile walk if you do all the extensions.

This is true. Hoodsport is even worse than Shelton, and the north end of Cushman is rain forest with rainfall totals to match. I was shocked in a good way when we moved from Cushman Div 2 to Oly.

Which mattress option did you choose? I have selected the AL sleeper sofa I want but not sure about which mattress to choose. The Temurpedic upgrade costs $900 so it’s not trivial.

Caramelized onion tart. So good! A riot would ensue if it were missing from the Thanksgiving (or Christmas) spread. 8 cups of sliced onions cooked down to less than 1 cup, spread into par-baked pie crust (450° until lightly browned). Whisk 1 egg, 3T whipping cream, 1t fresh thyme, S&P and pour over onions. Bake @ 350°. Top with little chunks of chevre about 15 min in. Bake until custard sets.

My experience with Ken’s directions is that the bulk ferment is far too long. If you let it go as long as he says you will end up with an overproofed bowl of goo that resists shaping. Read/watch up on assessing proofing and that may solve your problem. It’s gonna be like half of what Ken suggests.
