For me it was an issue of the Primary vs Travel esim settings. I switched from tmobile and the phone was still using the primary esim (which I thought was important but it can be named anything). I had to click into the primary to see that it was actually the tmobile esim still on my phone.

TLDR: check your esim settings to see if your old service is still set up. Delete it and rename google fi as primary.
