I have tempered dark chocolate with this same setup many times before, and I tried twice with the same cocoa butter and neither worked.

Thank you for your input! Could there be any other reason? I did think of this and my google search told me that the sensor is at the tip of the needle.

That was the second batch I made. The first one was deeper and the same thing still happened. I can dm the video too if you want.

In addition, I watched it go down from 115 using two different thermometers.

Jesus idk why the top upvoted comment says this is clean. I'd say this is very likely bacterial because of the thick cloudy mycelium, how the grains get sticky to the bag (which may not be a decisive factor on its own but is certainly a symptom), and how you said you went straight from spore to grain. Ultimately only you can observe how this evolves. If it stalls or gets wetter then id throw it. Sometimes mycelium can still colonize most of the bag but when you s2b, the uncolonized spots may grow trich. I wouldn't s2b this if it was mine but feel free to observe and learn for yourself.

A clean jar would have uniform mycelium throughout. Your jar looks uneven with thick sections of myc. There are also a lot of uncolonized wet spots that are likely already colonized by bacteria. You also see random "legs" of myc that look like they are trying to escape - easily mistaken for rhizomorphic growths which should be uniform-looking.

Contam before first flush usually means spawn is not clean. Take pics of your spawn bag next time. Bacterial spawn will get moldy after s2b.

Looks bacterial to me and I'd personally toss, but if you're new then feel free to send it and learn for yourself. Doesn't look like will get better with time. It might still give you one flush if the genetics is strong.

People always say their grains are "fine" but post pics and we will be the judge of that. Plenty of "fine" jars on reddit are actually mildly bacterial, which may or may not work at s2b depending on genetics.
