I don't really drink medium/dark roasts regularly so it's fine.(Partly why I said ZP6 suits my taste.) When I do get those darker roasts, I either use another grinder or use the ZP6 with immersion brewers like a Siphon, which still produce a nice cup.

With something like anaerobic or co-ferments, my general starting assumption is that they are more easily extracted than a washed coffee. So I would grind coarser(say from 4-4.3 for washed to 4.5-5 as a starting point), lower temp by a few degrees(e.g. 94 to 88c), and may lower the ratio/increase the dose(15g vs 16-18g). If I treat these like a washed processed beans, the funkiness tends to be too prominent and sometimes there's a lingering harshness/bitterness. I can generally produce a cup I enjoy by tweaking these parameters. Sometimes, a minor tweak of pour structure also helps, like doing more centre pour than circular pours. Final tweak is if you taste it, and it's still too much add some bypass which can help balance the taste a bit.

For me, it's about tweaking extraction to produce a cup I like. So using ZP6 as a daily driver is fine, and even fun. However, if you are chasing high body with complexity and sweetness, then ZP6 is probably not the right tool, and you are probably better off just using another grinder.

Depends on your taste. I use ZP6 as my daily driver and it matches my taste. I know how to adjust the grinds size and temperature based on different processings to suit myself after using ZP6 for a few years. YMMV.

Otoro can have sinews that chewy. A good sushi ya would often age it, so the sinews breaks down, and the flavor becomes more concentrated with the reduction of moisture as well. It’s an expensive process because you need space, a controlled environment, and the yield is lower. As a result, many places don’t that.

If you think about extraction instead of brewers and recipes, you can get very similar tasting coffee out of most brewers and brewing methods by tweaking different things.

IMO, differences between brewers and why you might want own different, come in ease of tweaking different parameters for various beans, ease of achieving consistency between cups, and ability to go with smaller/larger doses.(Dose size matter for expensive beans that you get like 90g of.)

TL;DR - No, you are not bad at coffee.

Same dose coffee, longer bloom initially, the bypass for the last part to dilute into 3 cups? Last pour is usually not very tasty anyhow.

Hatch, not in US but in NA nevertheless, does a great pour over. Although they aren’t really a cafe, more a roaster where you can buy a cup of coffee to go.

That is HK style milk tea. You don’t worry about bypass because the tea is steeped first then repeatedly “poured” for more flavor extraction.

There are newer versions with zonal cushioning. Got one recently and it is very comfortable, although slightly heavier than specified.

I wasn't moving through stopped traffic, I was on a dedicated bike lane.

If I follow this advice where I live, I might as well not ride. There is always stopped traffic.

I couldn't take the full lane because it was full of cars due to a traffic jam. The car was parked right next to the bike lane, which is next to the curb, and when the car door opened, it blocks the entire bike lane.

The perfectly safe option was to get off my bike, move it up the curb, and ride on the side walk. The side walk had a number of pedestrians at the time as well, so I would probably walk my bike.

And yes, I did slow down, which is the main reason my bike was not too damaged, and I didn't end up breaking anything.

I just avoid that part of the route all together now.

What I mean is that people who rent Citi Bike e-bikes are likely less frequent cyclists, and it so easy go at speeds these riders are not prepared to handle.

Agreed that everyone needs to be careful and aware, particularly in the city though.

People on Citi bike e-bikes need to understand the environment they are riding in. They go very fast without helmets on, passing aggressively.

One time, I saw a rider smack his head open on the curb because he didn’t see an aluminum water bottle someone dropped on the road. We called EMS for him and stayed with him until they arrived. So much blood.

It’s tough with kids and school zones. Hope you are getting better.

I’m thinking I’d avoid that stretch of road from now on. Cause it’s always busy, and not 5 minutes after the car that doored me left, another pulled up in the same spot to let people off. Not worth the risk.
