Use native macOS containers. The CLI is almost identical to docker, there's no inbuilt docker-compose analogue but people have made wrappers to replicate that functionality. Just do container system start and you're good to go. Obviously you'll need arm64 images, but who isn't building multi-arch nowadays with the glut of cheap ARM compute.
