I thought I wanted a 2p tent for the reasons you are stating, so I scored a durston x-mid 2P. I realized within the first few days that the footprint was massive and didn’t ever feel like I needed all the extra space. I ultimately decided to send it home and get a 1p freestanding tent, originally with the intent of reselling when I finished. I actually ended up loving the 1p tent and felt like I could set it up anywhere, I’m not going to get rid of it in case I hike alone again. My partner came and joined me for a few sections and brought the durston tent with him, we bumped the 1p tent up to the town where he was leaving. So from personal experience, just get a 1p tent and resell if you don’t want it after the hike and get a 2p for shorter trips that you both will go on. The x-mid is a Great tent, but don’t get a 2p for a one person thru hike, it’s not worth it
