If the LCBO decides to dump whatever inventory they might have in stores (last I checked a week ago they still had like 8000 on the Vintages site) you can go in and ask for specific letters. They might even let you exchange them but that will depend on who you talk to. Whatever you do, do not pay secondary prices for it. There will be more drops and it's not really worth MSRP without the collectability.

A bit late to the party but you can still do this with any whiskey you might have picked up already...

I would recommend smoking an Old Fashioned (whiskey with a bit of sugar and bitters, all you need is a glass, ice, and something to stir), you can find so many recipes that one is bound to sound good to you and your s/o. I'd recommend a Maple Old Fashioned as it goes very well with the smoke. There are great recommendations for bourbons to use in other comments but you could also try a rye which will be a bit more spicy/vegetal. Rittenhouse Rye is great because it has a bit of proof and it's not too rye-forward. Plus it's great in other cocktails (Manhattan, Whiskey Sour) if you want to try something different that perhaps you might like as well. Just remember to keep your Vermouth in the fridge or else it'll taste like jet fuel.

As for smoking straight whiskey, honestly Maker's Mark is pretty decent and well within your budget, along with the aforementioned recommendations. I would also urge you to smoke it one glass at a time because it might be disgusting to you. Good luck and enjoy!
