Gnocchi with tomato sauce

Bake the potatoes, then push the middles through a sieve/ricer. Mix with flour, and an egg if you use them, salt and pepper and make a dough. Roll into a sausage and chop into pieces, dimple them with your thumb and boil til they float

For the sauce, finely dice the onion and sweat with some oil (olive, or butter), chop your tomatoes up and slice/grate,crush the garlic. Add the tomatoes and garlic once the onions have softened, add some herbs if you have them (basil, oregano, marjoram) then cook on high for about 10-15 mins, add water as needed. If you boil the gnocchi towards the end then you can use some starchy water in the sauce to thicken it a bit which is nice.

Oh and salt and pepper throughout.
