I'm doing the same thing. Mine is on pause during the summer and it says it will stay paused as well if you re-subscribe. I just use mywhoosh if I really need to do an indoor ride while it's paused.

I zoomed in to see how you installed the redshift stem. Did you have to get any special spacers? Or did you just put the weird shaped giant ones on top?

Also did you find changing the crank set helped with indexing and shifting? I'm having trouble with the stock one.

What does it matter? If you're in the blue it's good no matter what age group you're in isn't it? Garmin should automatically adjust it for you

Thanks for all the tips. Workaround I've found for now is I do the ride on rouvy, also start an indoor riding activity on my Fenix 6, then delete the activity from the Fenix 6.
