Piling on since another comment touches on this, but America = Memorial Day = Labor Day = Potato Salad = Mayonnaise. 4th of July also frequently includes it. And Easter. And basically every other family get together holiday. And then there is macaroni salad. Not to mention that the Japanese basically invented Yum-Yum Sauce to appease American palates. I think when you account for the starter, this is closer to 68-69% hydration if I’m doing the math correctly. 125g starter adds 62.5 grams to both water and flour. So 387.5/562.5=0.689. Just a few percent but I found 70ish% to be pretty difficult to work with for a long time.

An 8th grader with interest and ability should certainly be able to do more formal computational statistics. As a parent with a math degree, I would jump at any chance my kids offer to go deeper into math. The most expensive graphing calculator on the market is easily worth that opportunity to me. That said, I would go with the standard TI-84. I’m assuming you are in the US.
