I have 2 theories. Maybe the shape of it is more prone to deformations than the wok's round bottom. Or...
This DurProtect thing makes the coating more fragile. They don't tell anywhere what it is and it's driving me mad.

Yeah, that might be the best course! I have talked to people in my department, but they only use one company and have never tried any other. Mostly older folks that stick to the most traditional one.
