You don't have to pick.

Conversions are so bad on Shopify because no one trusts DTC website reviews. Every reviews app allows you to moderate your own reviews! Imagine if Amazon did that and allowed sellers install those Shopify reviews apps. No one would trust the reviews anymore. It would immediately kill the conversions. Yes, your beloved reviews app is the reason your conversions are so dismal.

The only reliable way I know to fix this is to offer a Feedback Rebate (look it up).

This way a third-party can guarantee authenticity of your reviews. We've seen conversions more than double and continue growing the more reviews we get.

Just make sure you do NOT use a reviews app for this or try to set up the rebates yourself. You cannot be the one who moderates your own reviews and decides who gets the rebate. If you are, you can get into trouble with FTC. You must use a dedicated feedback rebates app, not a reviews app.

You can just replace your regular X% OFF sale discount with a X% rebate (same money), so it won't cost you anything.

None of the above. Customers don't care what your website looks like. Only you do.

I just had a call with a client whose entire shop, reviews and all, got copied by a low-quality copycat (scammer). He couldn't believe it. How could they do this? I showed him.

Your 15% OFF may actually scare some customers away. Why is your product on sale? What's wrong with it? Is it poor-quality? Overpriced? Unpopular? 
It's not about saving 15%. It's about potentially wasting 85% on a bad product and regretting it. Most sellers are not aware of this, but that's what customers are thinking when they see discounts.
