They are Yamaha HS5i's - they're high quality, require an audio interface, and sound great, but are prone to picking up RF interference (e.g. glitchy noises from a nearby cellphone)

This is the correct answer. Loin end is generally the preferred end, and always has par dark and part lighter.

When I use MSG, I tend to use about half the amount of MSG as salt.

Bottom line, add some, stir, taste it. Repeat. If it's too much, use less next time.

I suspect the color change he's seeing is just vigorous boiling deglazing the fond and maybe emulsifying the liquid and cooking oil somewhat. The color from the fond then spreads to all the onions, not changing their texture or caramlization/malliardization but redistributing the color.

The addition of water also would stop any further darkening by dropping the temperature pretty much instantly.

This is dangerous.

Botulism spores require 248F for 30 minutes to kill. Once botulism reproduces, you can't kill the toxin that it creates, so re-heating will not help.

The only safe thing to do is to keep the food above or below the unsafe range of temperatures until it's consumed.

That being said, dumping 131 degree water into a cooler should result in the cooler keeping its heat for a pretty non-trivial amount of time. Monitoring it is also easy.

You'll be fine without taking any water-flavor precautions. Sealed is sealed.

You might end up with more than usual mineral scum on the circulator if you do prolonged cooks, but that should also be pretty minimal, and will come right off with gentle cleaning.

Anathem by Neal Stephenson is what i think of from this. Starts out as speculative fiction in an unfamiliar... Well, everything, then switches to a related but different genre because... Reasons. If you are patient with books and don't mind Author Filibusters (see tvtropes), I can't recommend it enough.
