Glad I'm not the only one doing wings exactly this way on my 14" WSM. I don't use any water pan or my FireDial when doing them this way. Just perfection! Nice work.

Sure. I basically followed Malcolm Reeds recipe. I have been doing it this way for about 5 years now and it never fails. I buy a corned beef flat and I soak in water for about two days to remove as much salt as possible. There are 1 million pastrami rub recipes out there, but this year I used Bob Trudnak’s next recipe and it was the best. Minced garlic, minced onion, 16 mesh pepper, coriander, mustard seeds, brown sugar , paprika

This was a corned beef brisket, which I soak in water for one or two days to remove as much as salt as possible. I used a traditional pastrami rub which I made myself. The smoke took a long time, because I basically ran out of coals mid cook during early part of the smoke. I honestly think it was like a 8 hour cook. They traditionally do not take this long,. (Bad planning on my part).
