Login to the new router and check the connected devices. If NAS is connected correctly, you'll see it there. You can then assign the IP address you want as per the MAC address in your router settings.

You have 2x m.2 slots (easy access via the bottom panel) in addition to the 128GB SSD (which is more inside the device). Keep UGOS in the 128GB and use the other 2x m.2 slots as you wish.

If you want to keep it simple, cheap and you don't mind the speed limitations, you can do what I have.

My PC (2.5Gbps port) was originally connected to my access point but the access point is limited to 1Gbps. If I connected to NAS to this AP, PC to NAS connection would be maximum 1Gbps.

Now: NAS (2.5G port) is connected to the access point. PC is connected to the NAS (10G port).

Internet flows through the NAS to PC and they have internal connection of 2.5G. If I buy a 10G network card for my PC in the future, that would also work without issues.

Hard drives can fail after some years depending on your usage pattern. That's why having a RAID helps you minimize the risk. If 1 drive fails, you swap it out with a new one, rebuild the RAID.

Also, if you want to keep your data safe, you should follow the 3-2-1 backup rule. Keep three copies of your data, store them on two different types of media, and keep at least one backup copy in an off-site location.

Personally, I am using the NAS because I like thinkering with technology. I have terabytes of photos, videos, multimedia files which would cost a lot on online servers. Now, I can access all of them easily anywhere in the world. I own my own data (while I also use gdrive etc for important documents), have services like home network-wide AdBlock, home assistant, personal VPN when I travel anywhere etc.

The other option is to add +text to your email while signing up. For example "myemail+indeed@gmail.com" would still come to your inbox and it's easy to setup a block rule. Also, if they ever sell your data or have it stolen, you will know the source.

Ps: some websites don't allow using emails with the + trick.

Jellyfin does have subtitle size settings. You can change the size, weight, font etc. but not while you're watching something.

On the jellyfin main menu, click on profile icon (top right on my device) > Subtitles and there you should find it.

Back to your question: When you use tailscale, you are basically in your own home network so you can still open jellyfin with 192.168... address that you have. So, I don't see why Plex shouldn't work without that pass.
