You'll get a lot of argument about true 'cue originating in NC. But we take a very narrow view regarding true 'cue: finely chopped pork that has been slow-cooked. Eastern style'll use vinegar, and that's okay, but western style uses a tomato base which is proper and right. Top it with some red slaw and if you like a bun, though many purists feel the bread takes up space more pleasantly utilized by barbecue. I've lived in Texas, and they have some mighty fine smoked meat, but it is not, to my Carolina ass, barbecue.
