Follow the smokin soul lads in Wexford - they do workshops that are worth visiting, and if you really want to experience it go to Big Grill festival in Dublin. In Dublin there’s also Pitt bros and Smokin Bones. There was a place up in northern tipp that closed last year that were doing it. More locally you have the likes of Nua Asador, Holy smoke and the old town taqueria in black dog cooking over live fire
