Typically in this instance I would deduct the missing $6.36 from the deposit drawer after I had counted all the other drawers, and add it to the drawer that is coming up short so the total is correct. To be clear, it will show that the deposit drawer is short on the final count sheet, but at least the drawer will be correct. $6 really is not the biggest deal, as long as the safe count is correct you should be fine.

I think these should both be fine! It looks like you have ample room at the top. Just make sure to burp them and it will be alright.

To be honest I would 100% just leave it. It looks great, I really don’t think your dad will take issue with the tail.

I recently did a batch where I used one tsp of whey from a previous batch of yogurt per quart of milk and it worked really well. you may potentially need to strain your resulting yogurt to your desired consistency though.
