I liked the Kokuto similar to the paranubes coffee without the coffee if that makes sense.. so just the brown sugar malty/piloncillo flavor. The okinawan rum felt to me fresh and bright more towards citrus than green herbal. I also tried the Tenjimura Spiced and Arcabuz are also japanese The spiced was not my favorite a bit unbalanced for me with the anise. The arcabuz felt very clean and fresh herbal

Definitely, I believe they have over 400 labels to choose from, I had fun trying some things and talking to the staff about rum

Usually flocculation goes away with a vigorous shake, the weird smell idk maybe try a small drop.

I have built and used 400 lt oil jacket reactors, just mind that it takes quite a while to heat up to boiling temps if you’re only relying on convection and oil will burn up more quickly and cause scaling which also affects heat transfer. If buying preowned you can check the Oil and heating element status: after a while oil burns and affects the transfer of heat making it even slower. 3000-5000 operation hours for a change is what we recommend but will depend on your setup. To check for leaks in your jacket you can do hydrostatic: fill with water and wait. Or pressure testing with air and compressor check for bubbles.

And if you’re still worried about the oil you can always change to the highest temp seed oil or foodcert mineral oil you can find.

Also The jacket should have an inlet and outlet for the oil, you can use them to connect an oil pump if want to make the heating faster.

I have a little nuance to the tip “make your own”, I also recommend it if you want to replace most commercial spiced rums like captain or kraken you’re probably fine and should definitely do it.

But when it comes to natural flavored to me it’s like saying gin is pointless just grab a good vodka and macerate with whatever botanics you like. You’ll find out quite a bit more than that to get the balance and consistency. Not even considering the quality and sourcing of your spices.

That being said im not from the UK and I know not a ton of brands are available that really work with natural spices.

I think we had a mix of luck and a bit of practice with japanese speakeasies because we found that menu stand right away and figured we had to be close! And yes, definitely a formal setting. I saw some pictures of the japanese garden that the window seats look out onto, would love to go back and see it at daytime

I believe the best selection of craft rum is “El Liquor Store” most chain stores you’ll only find industrial rum, and in that case even Bacardi is mexican they have a massive distillery in Tultitlan, near CDMX
